Thanksgiving Meal

I have been hard at work planning our Thanksgiving meal this year. I am determined to have a healthier yet tasty meal that comes in under 1000 calories. I plan on this being my main meal of the day with maybe some oatmeal and fresh fruit throughout the day.

I'll have a vegetable tray as an appetizer with low calorie ranch dressing and some humus. Also I will have out some mixed nuts.

1.Watercress and Endive Salad with Lemon Vinaigrette from Eating Well by way of Jillian Michaels. The recipe can be found here. One serving is 136 calories

2. Turkey - 16 pound vegetarian fed turkey from Fresh Market On serving of 4 ounces is 153 calories.

3. Meringue Topped Sweet Potato Casserole from Eating Well. The recipe can be found here. One serving is 196 calories

4. Green Beans with French Herbs from the National Turkey Federation by way of Jillian Michaels. the recipe can be found here. One serving is 40 calories.

5. Gingered Cranberry Raspberry Relish from Eating Well. The recipe can be found here. One serving is 58 calories.

6. Sister Shubert Whole Wheat Rolls. One roll is 140 calories

7. Roasted Butternut Squash, Apple and Pecan Salad - This is a recipe from one of my Canyon ranch Cookbooks. One serving is around 125 calories. It has butternut squash, granny smith apples, pecans, pumpkin pie spice and maple syrup in it.

8. Pecan crusted Pumpkin Pie. This is a recipe from one of my Canyon ranch Cookbooks. One serving is around 150 calories. The crust has graham crackers crumbs, pecans and applesauce in it.

Grand total is under 1000 calories. I cringe at thinking what a regular meal is.

My father is also making stuffing and gravy but I will not be having any of those.

I'll let you know how it all turns out.
